INGREDIENTS

Þ 2 cups egg whites

Þ 1/2 cup cottage cheese

Þ 1/2 chopped tomato

Þ 1/2 chopped onion

Þ 1/2 cup blacked beans

Þ 4 whole wheat tortillas

Þ Salt and pepper

Þ 1/4 tsp chili flakes

 

METHOD

Þ In a small bowl whisk egg whites, cottage cheese, salt, pepper, and chili together.

Þ In a medium pan coated with oil, sauté vegetables and beans until soft.

Þ Pour the egg/cottage cheese mixture over vegetables and cook mixture until it sets.

Þ Once firm, divide egg mixture among the warmed tortillas.

Þ Roll each into a burrito.

Þ Garnish with low-fat-sodium salsa
