RECIPE OF THE MONTH- Southwest Salad

Serves 4

Ingredients:

2 hearts of cos lettuce

1/2 cup of shredded cheese

1/2 cup of canned black beans – rinsed

1 cup of cherry tomatoes

800g of chicken breast (cooked)

1/2 cup of canned corn

1/4 cup of diced red onion

12 tortilla chips (optional)

Taco sauce (optional)

 

Method:

Chop/tear lettuce into small pieces and line the bottom of a large bowl

Chop/prep the veggies and cut chicken into small pieces

Layer veggies on top of lettuce

Place chicken on top

Toss before serving and dress with Taco sauce and chips if desired
