Ingredients
- 150g lamb mince
- 2 tbsp olive oil
- 1 cup broccolini
- 4 zucchinis
- 50g tomato paste
- 1tsp lemon zest
- 1 tbsp rosemary
- 1 tsp thyme
- 1 tsp oregano
- 1 red onion
- 2 garlic gloves
- 2 tsp butter
Directions
- Place herbs, lamb, butter, red onion and paste in the slow cooker – cook through until tender
- Boil broccolini until medium soft
- Grate zucchini and add oil into a fry pan and fry for 1 minute.
- Lay broccoli and zucchini on a plate and place lamb mix over top. Season with salt and pepper.
