Healthy Lamb Mince & Veg

Ingredients

  • 150g lamb mince
  • 2 tbsp olive oil
  • 1 cup broccolini
  • 4 zucchinis
  • 50g tomato paste
  • 1tsp lemon zest
  • 1 tbsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 red onion
  • 2 garlic gloves
  • 2 tsp butter

Directions

  1. Place herbs, lamb, butter, red onion and paste in the slow cooker – cook through until tender
  2. Boil broccolini until medium soft
  3. Grate zucchini and add oil into a fry pan and fry for 1 minute.
  4. Lay broccoli and zucchini on a plate and place lamb mix over top. Season with salt and pepper.
