1 cup almonds, roughly chopped
1 cup cashews, roughly chopped
1 cup unsweetened shredded coconut
1/2 cup almond butter
1/3 cup honey or maple syrup
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 tsp sea salt
Optional: 1/2 cup dark chocolate chips or dried fruit for added flavor
In a large mixing bowl, combine the chopped almonds, cashews, and shredded coconut.
In a separate microwave-safe bowl, melt the almond butter, honey/maple syrup, and coconut oil together. Stir until well combined.
Add the vanilla extract and sea salt to the wet mixture and stir again.
Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
Line a baking dish with parchment paper and press the mixture firmly into the dish, making sure it's tightly packed.
If desired, sprinkle the dark chocolate chips or dried fruit over the top and press them into the mixture.
