Ingredients
- ½ Avocado
- 100g Rocket Salad
- 75g Chick peas
- 5 Cherry Tomato’s
- 5 Olives
- ½ Zucchini
- ½ Sweet Potato
- 1 Egg
- 1 Chopped Scallion
- 2 tbsp Flour
- 1 tbsp Coconut Oil
Directions
- Shred Zucchini and Sweet Potato, place in a bowl with egg and flour
- Place oil in in a fry pan and create circle shapes of the mix and cook until golden brown
- Place all other ingredients in a bowl and serve
